RED CHILE BAKED CHICKEN & POTATOES
4 medium (1 pound total) Yukon Gold potatoes, sliced
1 pounds boneless, skinless chicken breasts
1 jar Frontera Red Chile & Roasted Garlic Cooking Sauce
Heat oven to 400 degrees. Place potatoes in a microwaveable 8x8” dish. Drizzle with 2 Tbs. oil and sprinkle with salt. Cover with plastic wrap, poke holes in top, and microwave on high until nearly tender, 4-5 minutes.
Lay chicken in a single layer over the potatoes. Pour Frontera Cooking Sauce over and bake in oven until juices run clear, about 20 minutes.
Serve garnished with chopped cilantro.
